These cookies really satisfy a chocolate craving and they are gluten free. They have a small crunch on the outside and are still soft in the middle.
Ingredients;
3 cups powdered sugar
2/3 cup unsweetened Dutch-processed cocoa powder
2-4 egg whites
1/4 tsp salt
1 tsp vanilla
1 1/2 c bittersweet chocolate chips (make sure they are the GF kind)
Optional;
1/2 c chopped walnuts
Directions;
1. Preheat oven to 350.
2. Prepare two rimmed backing sheets with silpats or parchment paper.
3. In a large bowl whisk together the dry ingredients.
4. Add two egg whites and vanilla and beat. (You want the texture of a brownie batter - thick and squishy) If it's too dry or it isn't mixing well, try adding another egg white and so on until you reach the desired consistency.
5. Gently add and stir in the chocolate chips and walnuts.
6. Spoon batter onto cookie sheets evenly spacing them as you go. If you have a spring release cookie scoop - it will make this step a tiny bit easier.
7. Bake for 14 minutes until the tops are a bit shiny and a little cracked.
8. Slide cookies still on the paper or pat onto cooling rack to cool completely.
Store in an airtight container for up to 5 days, if they last that long!

Attention Chocoholics!
One of my friends makes these every once and a while and they are so good they never last long. She shared the recipe, so I'm sharing with you too!
CAUTION: These may become addictive!
Cookies for Chocoholics
Preheat oven to 400 degrees.
Ingredients;
1 stick of unsalted butter
1 cup of sugar
1 egg
1 tsp of Mexican vanilla
1 1/4 c. of flour
1/2 tsp of salt
1 1/2 tsp of double acting baking powder
3 tbsp of cocoa powder
1/2 c. of semi sweet chocolate chips
1/2 c. of chopped walnuts (optional)
Directions;
1. Cream butter and sugar in a medium mixing bowl.
2. Combine vanilla and egg in a small dish and scramble before adding to the creamed butter and sugar mixture.
3. Mix well.
4. Add the combined dry ingredients in two additions and mix well.
5. Add the chocolate chips and walnuts and fold in gently.
6. Spoon walnut sized scoops onto a greased cookie sheet and bake for 10 minutes.
This dough freezes well in case you want to make a double batch and freeze some for drop in guests.

Much more than cookies...

Girl Scout Troop 1637 is currently working on a Art to Wear Badge. As a portion of the badge work they have already completed a study of fashion through the ages and investigated fashions from afar. So when I was invited to talk to them about working for myself creating small pieces of fashion, I was delighted. Although I buy Girl Scout Cookies each year, this seemed like a much more personal way to support the Girl Scouts.
After a recitation of the Girl Scout Pledge and a few announcements, the troop leader Mrs. Baker introduced me. I talked with the girls briefly about creating things to wear and sell on consignment as well as on Etsy at http://laalicia.etsy.com. We began our hands-on project by picking a cigar box to make a purse. We talked about the importance of recycling things and got about the business of figuring out how to create a handle and decorate our boxes. I was impressed by their enthusiasm and willingness to try something new. I think they are a troop of very creative girls. Check them out showing off their new purses.
